Quick & Easy Healthy Dinner Recipe.

Sausages with Tomato Sugo & Pasta Recipe (Serves 4)

Ingredients

2 Tbsp Olive oil

6 sausages (can be any flavour i used chipolatas sausages), chopped

1 onion, finely chopped

2 Red Capsicum, cored, seeded and sliced

1 Yellow Capsicum, cored, seeded and sliced

Salt

Pepper

400g diced tomatos in juice

400g Penne Pasta, boiled with a pinch of salt

Served with cheese

Method:

1. Heat oil in a large frying pan over moderate heat. Add the sausages, onion & capsicums. Fry Briskly, browning slowly for about 15 minutes until sausages are cooked and the vegetables are soft.

2. Add the tomatoes and mix well. Simmer for 4 minutes, taste and season. (if to plain.. try adding some chilli sauce or garlic.. up to your tasting)

3. Toss the mixture with the hot penne and serve sprinkled with pasta and plenty of cheese :D
